I have a confession, I’m not a food blogger — just a mom who loves to cook. When I started out, my recipes were good, but my pictures were bad. Really bad.

Since then, I’ve learned a little about photography and improved some (I hope), but I’m still just a mom who cooks and sometimes, I get tired of writing elaborate descriptions of recipes, because, really… who reads those anyway?

Rather than attempting to write a fancy description about how delicious, delectable, perfectly balanced, and ______ (insert other over-used food word here) this recipe is, I’ll let its simplicity speak for itself.

Sausage & sweet potato hash isn’t fancy, and I wouldn’t serve it at a dinner party (unless it was a dinner party centered on watching sports), but it is a quick meal option that my children absolutely love and that is super simple to make.

Sweet Potato Hash + Sausage and Apples…

= Easy Make-Ahead Breakfast!

My favorite thing about this recipe is that I can make most of it ahead of time. I usually work through the first few steps one night while making another dinner. With the oven and stove already on, it isn’t any extra work and then I have a protein rich breakfast ready to go.

This recipe is delicious and full of nutrients. I love this as a make-ahead breakfast recipe since most of the prep can be done ahead of time for a quick but nutritious breakfast.

Ingredients

  • 3 medium sweet potatoes
  • 2 TBSP olive oil (or coconut oil)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 2 granny smith apples
  • 2 medium onions
  • 1 lb sausage
  • 6 eggs (optional)

Instructions

  • Preheat the oven to 450°F.

  • Peel the sweet potatoes and cut them into 1/2 inch chunks.

  • Place them on a large baking sheet or sheet pan and toss with olive/coconut oil and sprinkle with salt, pepper and garlic.

  • Drizzle with the coconut oil and sprinkle with spices. Toss to coat.

  • Roast the sweet potatoes until they are soft but not mushy, about 25-30 minutes.

  • While sweet potatoes are roasting,brown the sausage in a medium skillet. When browned, remove and set aside, reserving grease in the pan.

  • Core the apples and slice the apples and onions and add to the same skillet. Saute on medium heat until translucent and caramelized.

  • Remove sweet potatoes from oven and add the sausage, apples and onions to the pan with the sweet potatoes. Stir to combine.

  • Serve immediately, or, if making in advance, let cool and cover. Place in refrigerator for up to two days until ready to use for a meal. To reheat, preheat oven to 425 degrees. If using eggs, make small wells in the sweet potato mixture and crack eggs into the wells. Bake for 10-15 minutes until heated through and until egg yolks are desired firmness.

You can substitute chicken, grass fed meat, or other protein for the sausage if you’d like.

    This recipe is my nieces favorite. If I don’t make it for any holiday, she is disappointed. She has put in a request for this at Thanksgiving, and if course I will be making it again for her…and the rest of us!

    I’m replying on a certain recipe, but this is actually a very general comment.
    I really like your website, and very much relate to the wholesome natural attitude towards living.
    Also, as a biologist and a medical student and researcher, I believe that most of these little natural changes we make, whether cosmetic or dietary, really do have a cumulative effect on our health.

    What I don’t seem to understand, though, is how you still feed on dairy and meat and eggs.

    You spoke about how we don’t eat grains the way we *used* to, but the dairy/meat industry is just the same.
    And it’s not only on the health level – animals being crammed into tiny spaces, not being able to wonder freely which keeps them healthy (and in turn, us healthy), and are fed with antibiotics to prevent them from becoming sick due to these exact same conditions.. And in anyway – meat and dairy just aren’t healthy, it is kind of a scientifically consensus (especially pork and beef, but were getting there).

    But what I really think is that GOD never intended us to eat meat this way. Those days there were less humans, and animals were treated with respect, not in a systematically industrial way that needs to supply enormous amounts of meat and dairy… I’m sure in the days of Jesus calves weren’t cruelly divided from their mothers..
    God intended us to rule the animals with kindness, and like we do, so by eating meat and dairy and eggs – we are creating for our-self’s a terrible karma

      That’s why I recommend buying from local farmers whenever possible, so you know the source of where your food is coming from, and when not possible, to purchase organic fed, free-range options…

    This turned out great. I substituted Japanese sweet potatoes (they taste like chestnuts when raw) just to be a little different, and it still tastes great.

    Hi im a 48 yr old single father of two young children living in a homeless shelter. We are required to use a microwave only but some rules were mad to be broken. Especially where my kids are concerned. They have never eaten food from a box nor will they ever I only have a toaster oven and a couple of electric pots and pans. I want to thank you for some really easy nutritious ideas for the limited resources I have. sausage and sweet potato hash will be on my kids plates for dinner tonight thanks again.

    Your recipes are delicious, I do have one problem with most of your recipes. The preparation time: 5 min. Unless you have 30 people working on any one of those recipes, it is impossible to prepare in 5 min. Please let me know why the prep time is always 5 min.

    Dang! I was really trying to get sausage out of my life and here you go posting a recipe with my favorite ingredients. Yeah, I could substitute chicken as you said, but I probably won’t.

    Mmmm…sounds so good!! And my little guy and I love sweet potatoes! The hubby not so much but he’ll eat them for us 🙂 And I think our go to dinner when we are running late (which isn’t too often) and need something really fast is fried eggs and sourdough toast (or some leftover potatoes/veggies) with kerrygold butter 🙂 Not the most balanced meal but delicious and really fast!!

    All that sugar from the sweet potatoes and apples – plus the carbohydrates from the starches – perhaps substituting courgettes and cauliflower would be a better idea, and make sure that the sausage is low carb – they can be organic and still be full of carbohydrates from rusk.
