    For Breakfast

    1. Apple Oatmeal Cookies

    Cookies for breakfast are 100% acceptable when they come packed with oats, eggs, fresh/dried fruit, and seeds.

    Ingredients:

    • 3/4 Cup Whole Wheat Flour
    • 1 Cup Rolled Oats
    • 1 1/2 Teaspoons Baking Powder
    • 2 Teaspoons Ground Cinnamon
    • 1 Teaspoon Salt
    • 2 Tablespoons Unsalted Butter, melted
    • 1 Large Egg
    • 1 Teaspoon Vanilla Extract
    • 1 Cup Shredded Apple
    • Optional: Dried cranberries, raisins, pepitas

    Instructions:

    1. Preheat oven to 350ºF and line a baking sheet with parchment paper.
    2. Combine whole wheat flour, oats, baking powder, cinnamon, and salt in a medium bowl.
    3. In a separate bowl, whisk together butter, egg, and vanilla.
    4. Slowly add dry ingredients to wet ones, stirring until incorporated. Fold in apple, dried fruit, and seeds.
    5. Scoop equally sized rounds of dough onto parchment paper, using a fork to flatten. Bake until golden brown, 12-15 minutes.

    Ingredients:

    • 1/3 Cup Oats
    • 3/4 Cup Apple Juice
    • 1 Apple, shredded
    • Mixed Berries, for topping

    Instructions:

    1. Add oats and apple juice to a bowl or mason jar. Stir well and let soak overnight in the fridge. (For an extra creamy and thick result, add 1 teaspoon chia seeds as well.)
    2. The next morning, add shredded apple and top with mixed berries, nuts, and seeds.

    For Brunch

    3. Apple Dutch Baby Pancake with Sausage and Maple Syrup

    A Dutch baby is basically a next level pancake: the batter is poured into a pan, given a few slices of fruit, and baked in the oven until it puffs up and puts all those silver-dollar-shaped ‘cakes to shame. In this recipe, we’re topping the masterpiece with stewed apples, orange segments, and a generous drizzle of maple syrup — then serving it alongside flavorful sausage for an extra oomph.     4. Apple Pecan Breakfast Oatmeal Bake with Greek Yogurt

    For Lunch

    5. Kale, Apple, and Goat Cheese Salad

    Even the most dubious salad skeptics will get behind this recipe thanks to the trifecta of sweet apple, crunchy pepitas, and creamy goat cheese.

    Ingredients:

    • For the salad:
    • 1 Large Bunch Kale
    • 2 Jazz Apples
    • 1/3 Cup Dried Cherries or Cranberries
    • 1/3 Cup Toasted Pumpkin Seeds
    • 3/4 Cup Goat Cheese, crumbled
    • For the dressing:
    • 1 Small Shallot, minced
    • 1/3 Cup Extra Virgin Olive Oil
    • 3 Tablespoons Apple Cider Vinegar
    • 1 Tablespoon Honey
    • 2 Teaspoons Dijon Mustard
    • Salt and Pepper

    Instructions:

    1. Remove tough ribs from kale, then chop leaves into bite-sized pieces. Transfer to a bowl and drizzle with half the extra virgin olive oil. Sprinkle with salt and use your hands to massage kale leaves until tender.
    2. Prepare dressing by whisking together remaining extra virgin olive oil, apple cider vinegar, honey, and Dijon mustard. Season to taste with salt and pepper. Set aside.
    3. Chop 1 apple into bite-sized pieces and use a vegetable peeler (or sharp knife) to make ribbons with the second apple. Add to bowl with kale.
    4. Add dried cherries or cranberries and pumpkin seeds, then drizzle over dressing. Toss until well combined and thoroughly coated.
    5. Crumble goat cheese over top and season to taste with salt and pepper.

    Ingredients:

    • 4 Ounces Gin
    • 4 Ounces Apple Cider
    • Ginger Ale
    • Cinnamon
    • Braeburn Apple, for garnish

    Instructions:

    1. Combine gin and apple cider in a co*cktail shaker with ice. Shake well and pour into a glass.
    2. Top with ginger ale, then stir and sprinkle with cinnamon and garnish with a thin apple slice.

    For Dinner

    7. Sweet Apple Pork Chops with Cauliflower Mash and Carrots

    Pork has a way of embracing fruity flavors like no other protein. In this recipe, we’re smothering it with chunks of tender, saucy apple for a welcome touch of sweetness.     8. Baked Apples With A Cinnamon Oat Crumble

    This riff on apple pie comes together with tender baked Bramley apples, a crunchy and sweet oat crumble, and a scoop of vanilla ice cream.

    Ingredients:

    • 4 Bramley Apples
    • 1/4 Cup Brown Sugar
    • 1 1/2 Tablespoons Oats
    • 1/2 Teaspoon Cinnamon
    • 1/4 Teaspoon Nutmeg
    • Pinch Ground Cloves
    • 1 Tablespoon Butter, divided in quarters
    • 1 Cup Hot Water

    Instructions:

    1. Preheat oven to 375ºF with a rack in the lower-middle position.
    2. Halve apples, then use a melon baller, grapefruit spoon, or paring knife to core apples and create a well roughly 3/4-inch wide.
    3. Mix together brown sugar, oats, cinnamon, nutmeg, and cloves. Divide mixture between apples, packing wells firmly.
    4. Arrange apples on a baking dish and top each with a pat of butter. Pour water into bottom of the dish and cover loosely with aluminum foil.
    5. Bake 20 minutes, then remove foil and continue baking until apples are soft and brown sugar has melted and become slightly syrupy, another 20-25 minutes. The apple skin will also become a tad wrinkled by the end of cooking — that’s okay!
    6. Serve with a scoop of ice cream or Greek yogurt, and sprinkle with cinnamon.
