Spring is upon us and we are all looking for ways to use up those healthy spring vegetables. What better way to do so than to make soup right? Here are 15 delightful and healthy spring soups that I’ve gathered just for you! Oh, and they are low in calories too!

Whether you’re into light, creamy, thick, lemony, spicy, or simple vegetable soup, there is something on this list for you I promise! These spring soup recipes not only look good but they taste just as delightful so grab your aprons and let’s get souping mamas!

What Is A Spring Soup?

Well, spring soup is a vibrant bowl of soup that is made with vegetables that are harvested in spring. Although you may find most of these vegetables frozen at your local grocery store all year round, they won’t taste as good as the fresh produce from your farmers market.

Some of the most common spring vegetables used in soups include asparagus, peas, spinach, kale, collard greens, mustard greens, and turnip greens. Arugula, artichokes, beets, carrots, radish, spring onions, potatoes, and Swiss chard are also harvested in spring and are great for soups.

Some of the following soup recipes I have personally made and others I’ve gathered from around the web. I choose these recipes by looking through the ingredients, if it’s not healthy or packed with sodium, saturated fat, and calories, I don’t add them.

1. Spring Lemon Chicken Soup

This is a must-try! This soup is packed with fresh spring vegetables along with quinoa which makes it extremely filling. Guess what? It’s only 417 calories, however, go easy on the salt.

2. Low-calorie Spring Vegetable Soup

This spring vegetable soup does not include a ton of ingredients but tastes amazing! I tried it the other day and even my kids (who are not soup lovers) liked it! It comes with just 196 calories and is low in saturated fat making it perfect for most diets. Just go easy on the salt.

3. French Spring Soup

This soup is too good not to add to the list! Just make sure to use light butter and cream and DO NOT ADD 4 teaspoons of salt as the recipe calls for. I tried it and it’s very creamy and delicious, it’s also just 194 calories.

4. Green Pea And Mint Soup

I haven’t tried this green soup recipe yet but I intend to. Based on the ingredients, I think it’s healthy and definitely worth trying this spring.

5. Healthy Carrot Soup

This healthy carrot soup recipe is one of mine. I have made this a million times and it’s always delicious and filling. Since carrots are spring veggies, you really need to try this one.

6. Cream Of Asparagus Soup

If you want a creamy bowl of asparagus soup that does not contain cream and is great for freezing, you need to try this recipe. It’s packed with vitamins C & A plus it’s low in calories, sodium, and carbs.

7. Creamy Arugula Soup

A simple and delicious way to enjoy a fresh bowl of homemade creamy arugula soup! I tried this recipe and it was 5 stars for me! Just go easy on the salt but apart from that, it’s worth trying!

8. Lentil Swiss Chard Soup

If you want a healthy soup recipe that is low in calories and high in fiber, protein, and potassium, you need to try this lentil Swiss chard soup! Swiss chard is actually my favorite spring leafy green vegetable and lentils are a staple food in my home.

9. Swiss Chard & Farro Soup

Here is another Swiss chard soup that tastes amazing! It’s low in calories but mind you, it’s high in carbs. There is also a good amount of protein in each serving which makes this soup as filling as a soup can get.

10. Potato, Leek & Carrot Soup

Since potato leeks and carrots are all spring vegetables, I found a soup recipe that combines all three just for you. There is also a good amount of zucchini in this soup as well. My only advice is that you use light coconut milk and go easy on the salt.

11. Low-calorie Pea & Ham Soup (slow cooker)

I do not recommend this recipe for those with high cholesterol, however, if you want to try it, you will need to alter the ingredients by using chicken breast instead of ham. Other than that, it’s a nice and healthy spring soup recipe worth trying.

12. Carrot & Turnip Soup

Made with carrots, turnips, vegetable broth, and parsley, this low-calorie carrot turnip soup is a must-try spring soup recipe. I haven’t personally tried this soup recipe yet but I intend to very soon.

13. Healthy Minestrone Soup

This healthy minestrone soup has all the most common spring vegetables combined into one pot! The ingredients are mouth-watering and extremely healthy.

14. Spring Onion & Pea Soup

If you love spring onions and peas, you are going to love this soup! It’s very delicious and comes with aromatic herbs and flavors. Just go easy on the butter or go for light.

15. Spring Vegetable Orzo Soup

This wouldn’t be a list of spring soups without orzo, right? Well, last but certainly not least, this spring vegetable orzo soup is packed with healthy ingredients and delightful flavors. Just use 2 tablespoons of olive oil instead of 4 to reduce the cholesterol amount.
